Kang Pa Kai
 

Ingredients For Chilli Paste:

10 Hot chillies
1 tsp. salt
1 tbsp. galangal
1 tsp. Lemon grass
1/4 tbsp. thinly sliced garlic
3 tbsp. thinly sliced shallot
Other Ingredients:
1/2 kg. boneless chicken meat , diced
200 grams eggplant cut into bite sized pieces
5 kaffir lime leaves,halved
6 tbsp. Oyster Brand fish sauce
1 tps. sugar.
1 cup water

 

Preparation
1 Pound the Chilli paste well in a mortar.
2. Heat the oil into a work over a medium heat. Add the Chilli paste and stir well.Add kaffir lime leaves.
3. Then , pour the curry into a pot ,add the water add the chicken meat . When boil add eggplant , season a taste with Fish sauce and sugar .
