Ingredients
For Chilli Paste:

chillies |

salt |
| 1 tbsp.
galangal |
| 1 tsp.
Lemon grass |

tbsp. thinly sliced garlic |
| 3 tbsp.
thinly sliced shallot |

kg. boneless chicken meat , diced |
| 200
grams eggplant cut into bite sized pieces |
| 5 kaffir
lime leaves,halved |
| 6
tbsp. Oyster Brand fish sauce |

| Preparation |

Pound
the Chilli paste well in a mortar. |

Heat
the oil into a work over a medium heat. Add the
Chilli paste and stir well.Add kaffir lime leaves. |

Then
, pour the curry into a pot ,add the water add the
chicken meat . When boil add eggplant , season a
taste with Fish sauce and sugar . |
